We joined a CSA this year. Each week, we get a “share” of food from a local farm. We belong to the Sankanac CSA in Kimberton. On Friday, May 30th, we picked up our fresh vegetables: asparagus, red and green lettuce, Swiss chard, and spinach. I thought it might be interesting to keep a log of the food we’re getting and how we’re using it. It’s going to take some creativity to use all of the food. Fortunately, we’re splitting a share with our neighbors, but still… 2 pounds of spinach is hard to get through in just a week. I’m putting up some pictures of how we used the food. Besides having salads every day, we’ve been sauteeing the spinach with garlic. We won’t get much more asparagus, as it’s the end of its season, but we enjoyed this asparagus steamed and topped with some fresh lemon juice, olive oil, and Parmesan cheese. The salad in the picture is Ed’s creation. He threw spinach, leafy greens, and some pasta and chicken together to make his meal.

This is a really great idea … I wonder if they have CSA’s in NYC? I’ll look into it. Ed’s salad looks great – I’m impressed. Keep eating those greens!
