Apple Crisp Vegetables for roasting Pizza Sauce

Well, my weekly CSA updates quickly turned into barely-monthly-updates.  Last night, we made apple crisp to use some of the apples we’ve been getting every week.   We haven’t touched our vegetables in the last three weeks, and they’ve been piling up in our refrigerator.  I decided to make use of as many vegetables as I could today by making vegetable stock and roasted vegetable pizza sauce.  I found this recipe for vegetable stock, and threw in whatever extra veggies I happened to have.  It came out well, and I feel like I didn’t waste any of our food.
